Delicious Chicken Recipe And A Thought !

Happy Tuesday !

It's the last day of April where are the months going ? Feels like time is flying by and before we know it it's going to be the end of the year . But for now I'm still so looking forward to summer , and all the fun outdoor activities and  trips to the beach , funfairs , barbecues and some nice summer cocktails .
If you all spent the weekend watching Avengers Endgame trust me almost everyone did , and I did as well on Monday :) My night out on Saturday was interesting as well as a bit heart crushing . A woman who used to be friends with me and knew I had a crush on a certain someone has apparently no boundaries . She was her same drunken , slut self when I saw her at the club . Later she was so drunk and lying on the road when I saw my crush try to help her up from the road well I suspect he took her home and ... I am obviously sad and can't get my head around it but I am definitely glad I am not her friend and have not been her friend since the beginning of March ! Cheap people with no morals never will change ! I thought I could be a good influence on her and help her with her issues . Change has to come from inside and you have to want it until that happens you are beyond help !

But here is a beautiful and delicious chicken recipe which I want to share with you all !
This recipe come rain or sunshine , this simple classic one tray dish is bursting with Mediterranean flavours and boasts bundles of nutrients !!

Ingredients

4 full chicken legs ( drumsticks & thighs attached )
2 large peppers de-seeded and sliced
3 tablespoons of olive oil
2 tablespoons of balsamic vinegar
1 teaspoon of dried basil
3 bay leaves
2 lemons sliced
sea salt and pepper to taste
A handful of Olives

Preheat the oven to 190 C , or 350 F , Gas 5 , Place the chicken and peppers in the baking dish . Top with olive oil and balsamic vinegar ,and toss well . Sprinkle over the dried basil, scrunch up the bay leaves and throw them in ; season then place the dish in the oven and bake for 45 minutes , stir it once midway . Drop in the olives and lemons sliced when there is about 8 minutes to go . Serve with garlic bread and a side salad . It is delicious and we love having this for dinner . Happy cooking ! If you love garlic add 2 pods for extra flavour but leave it out if you have a date :)

April Indulgence ... Hair Care !

Happy Sunday !

After a weekend of partying , nothing feels better than relaxing at home on Sunday and watching Netflix . At last I decided to watch The Chilling Adventures of Sabrina . It's interestingly different but a big shame Salem ( the Cat has such a bit role ) the role had to be reduced because she was allergic to cats and only discovered it on set when filming began!

5. Batiste Ella Henderson Dry Shampoo at 3.29 soaks up extra moisture so no more greasy hair and if you are in a rush no more droopy hair . You would achieve a just shampooed look !

April Goals ... More Fruit & Veggies !

Happy Monday !

After a glorious weekend of delightful sunshine and warmth , the weather is getting alot cooler this week . Brexit is looming this Friday and hopefully the UK does not crash out ! it's all gone to shambles and nobody is certain of any outcome .
But here's a  thought about the eight best vegetables around, we could eat this spring , to get us healthy so our body is fit and able to maintain overall good health . Even though a lot of people are not fans of veggies , you could cook up some hearty meals to satisfy yourself and keep you top condition. These are my favourites and I cook them up in almost everything !

1) Spinach : 2 cal , It's high in fiber , protein ,calcium ,iron , magnesium , potassium and vitamins A ,C , E , K and B6 as well as high in sodium . The best ways to eat it is raw , in salads stir-fried or cooked in a curry .

2) Red Bell Pepper : 30 cal , high in fiber , potassium and vitamins A ,C ,K , D and B6 . High in natural sugars it is best eaten raw , or in salads , roasted or stir-fried .

3) Red Onions : 44 cal , high in fiber , potassium and vitamins C and B6 . They are high in natural sugars . Eat them in salads , raw , sauteed or stir-fried . Aldi & Lidl do good offers of Fruit and veggies all year round.

4) Tomatoes : 22 cal ,high in magnesium , fiber , potassium and vitamins A , C and K . High in sugars eat them raw in salads , sandwiches or use them in tomato based pasta sauces . Super delicious !

5 ) Eggplant or Aubergines or Brinjals , wherever in the world you are , those are the names used and I particularly  love this veg . 110 cal ,high in magnesium , potassium and vitamins C , K and B6 . Eat them roasted ,  grilled or stir-fried !

6) Cucumbers : 24 cal , this veg is high in magnesium , potassium and vitamins A , C and K . High in sugars , eat it raw or in salads .

7) Cauliflower : 3 cal , high in protein , magnesium , fiber , potassium and vitamins C , K an B6 . High in sugars eat it steamed ,roasted or in salads .

8) Mushrooms : 2 cal , high in fiber ,protein , iron , potassium and vitamins d and B6 .eat them stir-fried ,sauteed ,or roasted . Add them to pastas , noddles, salads and casseroles !

Enjoy your veggies and get your kids to eat them too ! Have a wonderful  week and keep smiling ! A wonderful new movie out and worth a watch ( I did this weekend ) is Shazam . It has comedy and seriousness to keep both young and old entertained .

Before I end stick with all good intentions eat less meat , more fruit and veg . Use less plastic in your day to day life and dispose of the plastic you use the proper way to look after the environment !

April Favourite .. A Chicken Recipe !

April is here at last but the April weather is getting cold and blustery.. needed the heating on this evening as I was super cold .. thankfully this is only going to last a few days and the weekend is promising to be a grand one :) Got my birthday coming up and I am so excited . Yes only I could love birthdays .. doesn't matter however old I get I am going to be super stoked at my birthday .  The year is proving to be a good one .. doing far more things than I've ever done before like keeping to my New Year resolutions . Going out more , making more friends, socialising etc . Even decided this year to start making a bucket list , well it just has two things on it for now but by the end of this year  it should have at least ten and maybe next year I'll start ticking off stuff !  This birthday I promised to get myself eventually the book I put off reading for many years . The time was right and I was ready to read it . Birthday Letters by Ted Hughes . It was emotional and compelling . He managed to touch on all the important highlights of a love so strong between two people which tragically went wrong as love does when emotions run high . I don't doubt Ted loved Sylvia very much, Birthday Letters says much more between the lines than just the raw poetry suggests . Grab a copy and don't miss reading the technical , linguistic genius of the charismatic legend that's Ted Hughes .

Today I thought I'd share with a nice chicken one pot recipe, which is super healthy and really easy to put together. Don't underestimate a one pot recipe, it can be very delicious, too. Have it with rice, if you can't live without it or combine it with any of your favourite side dishes. A rice, leafy green salad, or another favourite of mine, some pico de gallo. That's a Mexican word for a tomato salsa ''thing'' which I love.

The Ingredients:
1 tablespoon olive or canola oil
1 sweet onion (chopped)
2 garlic cloves (minced)
2 stalks celery (diced)
1 red pepper (sliced in thin strips)
1 cup mushrooms (chopped)
1 medium tomato (chopped)
½ cup brown rice (uncooked, not instant or quick cooking)
8 ounces boneless, skinless chicken thighs, cut into bite sized pieces
2 cups vegetable stock or broth (unsalted or low sodium)
1 teaspoon turmeric
1 cup frozen green beans

Directions:

  1. In a stock pot with a tight fitting lid, place all the ingredients except the frozen green beans. Bring to a boil. Reduce heat to low, cover and cook about 35 minutes.
  2. Stir in green beans, cover and simmer for 8-10 minutes longer. If needed, add ¼ to ½ cup more stock or water if no moisture left in bottom of pot. Ready to eat as soon as green beans are cooked.
