Delicious Healthy & Hearty Minestrone Soup!

Happy Monday,

 The start of a new week, I hope you guys are all bursting with energy and ready to go. At least it's not hot, so we can't say the heat is making us lethargic. The cold somehow gets you moving and inspires you to get fit. Go out jogging, or just have a long walk everyday exercise is good to get healthy and keep your muscles in good condition. Today as I had a little run there was this cat that just kept following me and wouldn't quit even though I ran a couple of times across the large intersections. Was it hungry, or lost - was I to be its savior? Well, I think not. I have two gorgeous young kittens who I love but that's it. So as we anxiously await the American election results (hardly two weeks to go, to Nov 8th). Trump to win, and I'm just so certain he will. Remember how all the Brexit polls and the bookies suggested we would remain? how wrong they were. The answer is always listen to the people.
 Today I'm  going to share a recipe which I love. It's a soup which is delicious, healthy, and very hearty. It's full with vegetables and is very nutritious. The Italians love it, and it really fills you up. Enjoy the minestrone soup!

Ingredients;
3 large carrot, roughly chopped
1 large onion, roughly chopped
4 celery
 sticks, roughly chopped
1 tbsp olive oil
2 garlic clove, crushed
2 large potato, cut into small dice
2 tbsp tomato purée
2l vegetable stock
400g can chopped tomato
400g can butter or cannellini bean
140g spaghetti, snapped into short lengths
1⁄2 head Savoy cabbage, shredded
crusty bread, to serve

Instructions:
1. In a food processor, whiz the carrots, onion and celery into small pieces. Heat the oil in a pan, add the processed vegetables, garlic and potatoes, then cook over a high heat for 5 mins until softened.
2. Stir in the tomato purée, stock and tomatoes. Bring to the boil, then turn down the heat and simmer, covered, for 10 mins.
3. Tip in the beans and pasta, then cook for a further 10 mins, adding the cabbage for the final 2 mins. Season to taste and serve with crusty bread.
