Outift Recommendation

Last day of January in the New Year.

The cold winds, lashing storms bad weather, everything came in one blow. We also lost a lot of celebrities. Today one of my all-time favourite, Sir Terry Wogan passed away. I was very sad to hear the news. His voice, wit and awesomeness will be missed. I could recognize his voice almost anywhere. Eurovision lost its humour the day he stepped down presenting. Graham Norton is just not the same. We also lost David Bowie unexpectedly. Vanessa Hudgens' father also passed away today. RIP all the souls we have lost this year.

Wine Recommendation

Happy Thursday!

Friday is just around the corner. Thinking of celebrating and having your friends over for a girly night with good wines and maybe a cheese platter?

Okay, I'm not an expert on cheese but I have eaten some really good ''young'' cheeses like Gouda.  Brie on a cracker I think is divine - but a St. Paulin is my particular favourite.

I also do know some really good wines which I would love to recommend:

White Zinfandel Rosé from Asda is my all-time favourite. At 11.97 per bottle, but is now on discount - two for 22. Don't miss testing it.

White Zinfandel - Rosé Californian Wine. A deliciously easy drinking wine in a handy box, equivalent to three 75cl bottles of wine. Perfect for sharing. This wine can be enjoyed on its own or with a wide range of cuisines. Soft and fruity rose with juicy strawberry and watermelon fruits - a perfect aperitif.

A wine rated with a massive five stars is: Hardy's Classic Selection Chardonnay. For 4.75, which is an absolute bargain!

Fresh tropical and peach fruit flavours with light oak influence and a crisp lingering finish.

El Circulo Rioja Tempranillo is a four star wine. Blood red and perfect for anyone who loves a nice deep wine for winter. Priced at 5.98 normally, now only at 4.37! Not to be missed.

Red Spanish Wine Bright cherry red in colour, this wine has beautiful floral aromas with notes of red berries. The palate has more juicy strawberry and damson flavours, with light tannins and a long persistent finish.

Easy Peasy Apple Pie .. So Delicious !

Happy Tuesday , This easy to bake apple pie recipe was a big hit , so I´ve decided to share it with you all again . Happy Baking and have a wonderful week !

With plenty of apples just plucked , the harvest festival celebrated and an abundance of fruit available at this time of the year , it's definitely time for a homemade apple pie !
I can remember all the times through the many years when I lived in the Netherlands going with my children to the Philips fruit farm and plucking Apples & Pears at this time of the year . Here in England there are no fruit farms close to me so we just buy the apples at the supermarket , adapt to your surroundings ;) !

I don't make flash desserts , so a very easy recipe I do for the kids and myself which is a big hit each time . Thought I'd share it with you all , who are not into cooking and want to dish up something simple and  delicious .


Get a packet of ready made puff pastry from the supermarket . Lay it out , either cut it into a circle or just leave it rectangular . Core your apples . Then thinly  slice it so they cook quick in the oven  . Lay it over the pastry sheet . Now liberally cover the apples with alot of brown sugar . Add a couple of pieces of ( baking butter ) over the top of the sugar . Now warm up your over to 200 degrees put the apple pie in and let it bake for 20/25 minutes till it's a nice golden brown . Five minutes before you take it out , add some chopped pistachio's or cashew nuts according  to your preference and let it  roast over . Take the pie out  , let it cool down and it's ready for serving . Delicious ! Bon Appetite !

Experiment , Do People Care ...

Good Morning everybody , hope your weekend was fun , exciting and peaceful however contridictry it sounds . We all need peace to break up any stressful situations .
There has been so much snow over in the USA and I have been watching it all over the news . Everyone keep safe , but build all those extra snowmen for me ... love them !!
These past few weeks I have thought about doing an experiment , maybe you all have thought about doing one yourself ! Ever thought if you were in a really bad situation and you had no money , no home , nothing lost everything ... how many of your so called friends would be there to help you !
Alot of people think I have alot of friends and someone would be kind and step up . So I decided  ,  to ask Four different people as an experiment to see how willing they would be to help me and believe me ALL Four ,Who I thought Would , just ignored my messages and never responded . YES That´s the kind of world we live in. No one would ever think of helping a friend leave alone do a good deed to strangers . One actually responded but it was immediately to say No he can´t help and put up somebody I knew in his house for a few weeks . I put out four different requests to see if people respond differently .
To one childhood friend I put out a resquest  for a loan of money . I never received a response . To another I asked if my friend could stay for a few weeks . It was immediately refused . To another I asked if my kids and I could stay for 12 weeks , we could feed ourselves only a question of a roof over our heads . No reply back . The last was a request if someone could help me with moving alot of stuff as I was moving home .. Never heard heard back from him , lol ...
People are not here to help anyone and my little experiment just proved people are not anymore the way they used to be more helpful in years gone by . The world has become selfish and you know what , each individual person is helping the world to grow more ugly everyday !
I remember growing up , even though we never had a huge house but we regularly had people who we gave shelter to for a few days , weeks . You know what we got back , BLESSINGS from God !
So that was the experience of my little experiment ! Would you think of doing something good for someone !
My Question Marks on this shit laptop is not working ,lol ,, so ignore the lack of puncuation in the right places .
I shall end here , hoping you are having an awesome day and don´t forget to be an awesome person as well !
Just a little note before I conclude , how come the next generation is growing up so crass ! Maybe they are influenced by all the stupid people in this world ! I read a little post on FB the other day and a friend´s daughter told her she´s an ugly person because she refused to let her daughter turn on the fan ! The world is in alot of trouble from where I´m standing . We all need to start being better people .

January: Money Saving Tips

January is always a tough month. Time to pull up our socks and get busy with ideas on how to save our pennies and make them into pounds!

Here are some excellent ways on saving your cash!

Bring your own lunch to work.
Yes, it’s a faff. But £5 per day on lunch costs you £1,000 a year. That’s a whole damn ski holiday you could be buying instead.

2 Pay an extra £20 on your mortgage each month.
You could shave two years off a 25-year term and save £4,000 in interest by putting in an extra £20 per month. Pay in an extra £50 for savings of almost £10,000 and to reduce your mortgage term by three years to 22. Bonus.

3 Turn your heating down one degree. 
An oldie, but because it’s true, damn it. Your living room should be 21c; the rest of your house 18c. Going down one degree saves 10 per cent (that’s £80) per year. Put on an extra jumper and have a cup of tea to warm up.
Not too many cups though – or that’ll be your £80 gone.

4 Set alerts for end dates on deals and freebies.

The Beauty Benefits Of Coconut Oil

I remember massaging coconut oil on my baby long ago. Nowadays I have a nice body lotion made from coconut oil to keep my body smooth and soft. Coconut oil has a lot of beauty benefits. As a body moisturizer
A recent animal study found that when applied topically, virgin organic coconut oil for skin can speed up wound healing, and a human study found it to be effective in increasing hydration and reducing water loss in seriously dry skin. Sounds like a recipe for a really good lotion to us! It's a health-expert favorite, too. Says Wyk: "It smells delicious, is very affordable, and leaves my skin feeling nourished and smooth."

To clean your face

To add shine
Smooth a tiny amount of organic coconut oil onto your ends of your hair to add a little shine, or on flyaways if you have dark hair. Remember that a dab will do you: Any more and your hair might appear greasy.

In a luscious body scrub
Here's a little DIY beauty secret: That store-bought body scrub you save for special occasions? It's a waste of money. That's because you can make one yourself with ingredients you already have in your kitchen. Low Dog agrees. "I love to do this. It's wonderfully moisturizing, great for the skin, inexpensive, and blissfully absent of chemicals you can't pronounce!" To make your own, Low Dog suggests melting ½ c of coconut oil at very low heat. Pour it over 1 c of brown sugar or salt and stir well. If you have some on hand, add in five drops of your favorite essential oil or some pure vanilla extract for a scrub so fragrant you'll want to eat it.

For a little rubdown
Many store-bought massage oils have either coconut or jojoba oil as their base. Cut out the middleman and go straight to the bottle. It's slippery, skin-friendly, and coconut oil for skin moisturizes, too.

3.Olay Anti-Wrinkle Aqua Physics Anti- Ageing Day Cream in a 50ml pot, costs just 6.66 and has got 4 stars , in reviews . It is an absolute bargain and will last you a good 2 months !

4. Nivea Q10 Plus Anti- Wrinkle Night Cream . This in a survey just before Christmas came out as the best anti- wrinkle cream tested , and cost a very reasonable 4.99 . A must try , and a favourite of mine !

5.Something a little bit more expensive , but worth every penny is from L'Oreal  Wrinkle Decrease Collagen Day Cream . This cream comes packaged looking very rich and lovely , a nice piece to display on your dressing table . It costs 8.66 , and has received 4 and a half stars in reviews . I say it's really worth it , and a must try !

6. Garnier Skin Naturals Ultra Lift Day Anti- Wrinkle firming Cream , comes also in a 50ml container , and costs 6.25 and is a natural , lovely smelling cream .It has received 4 stars in reviews .

7.Another great cream which is actually a serum from Olay Anti- Wrinkle 2 in 1 Firm and Lift Day Cream + Serum it's just 4.99 , under a fiver and a superb buy :)

8. L'Oreal  Dermo Expertise Age Perfect Day Cream , costs 7.99 and has received 4 and a half stars in reviews . Worth buying !

9.Nivea Pure and Natural  Anti- Wrinkle Night Cream costs a steep 8.49 but comes in some very plain packaging and I'm not sure it's worth the price .

10. Last I would recommend an Anti Wrinkle Eye Cream from Nivea Q10 . It costs 4.99 for a 15 ml tube but is absolutely worth using .

Delicious Seafood Sheperd´s Pie!

Hi Everybody,

The cold is finally hit us all and it´s no fun with everything freezing, and we have to dress with two layers of clothing because we can´t afford to warm the whole house.

So with the kitchen cosy and we´re all feeling hungry in the cold, a delicious Seafood Sheperd´s pie is exactly what we need to satisfy our need for a hearty dinner.

Hope you enjoy this delicious recipe which I often cook up for the kids. Always feel free to substitute any of the seafood to something more affordable. Recipes are all about adapting to fit your budget and pocket. Happy cooking!

Ingredients
  • 2-1/2 pounds Russet potatoes, scrubbed, peeled and cut into 2-inch pieces
  • Kosher salt
  • 3 tablespoons butter, cubed
  • 1/2 cup heavy cream
  • 1/2 cup milk
For the filling
  • 3 tablespoons butter (divided 2 and 1)
  • 1/4 cup shallot, diced
  • 1/2 cup celery, diced
  • 8 ounces sliced baby portabella mushrooms
  • 6 fresh thyme sprigs, leaves stripped
  • 1-1/2 cups cream (or 1 cup cream and 1/2 cup milk)
  • 1 cup dry white wine
  • 3 tablespoons flour, scant
  • 1 teaspoon salt
  • 1/2 teaspoon dried mustard
  • 1/4 teaspoon cayenne pepper
  • 1-1/4 pounds fresh cod, pinbones removed and cut into 1-2 inch pieces
  • 1 pound bay scallops
  • 1/2 teaspoon smoked paprika (regular is fine too)
  • 2 tablespoons flat-leaf parsley, chopped
  • 1 tablespoon fresh lemon juice
  • Fresh chopped chives for garnish
Make mashed potatoes

Bring potatoes to a boil and cook until fork tender, about 15-20 minutes. Drain potatoes and return them to the same pot. Add a hefty pinch of kosher salt. Add butter, cream and milk and smash potatoes using a potato masher until smooth (a somewhat lumpy consistency is fine and adds to the texture of the dish). Taste, add additional salt if needed. Set aside.

Make filling

Preheat oven to 400 degrees F. In a large saute pan, melt 2 tablespoons of butter over medium heat. Add shallots, celery, mushrooms, thyme, a pinch of salt and cook, stirring often, until soft and fragrant, about 5-8 minutes. Turn off heat and set aside.

In a medium-size pot, over medium heat, add cream, white wine, flour, salt, dried mustard and cayenne pepper. Whisk together to incorporate all ingredients. Bring to a boil, whisking often. Once boiling, turn down heat to low and continue cooking, whisking often, until thick, about 8 minutes. Turn off heat and add the remaining tablespoon of butter and the shallot, celery, mushroom mixture to the cream sauce. Stir together well, taste and adjust seasoning if needed then set aside.

Spray a large casserole dish with sides with cooking spray. Place cod and scallops on the bottom of the dish in an even layer. Sprinkle with smoked paprika and parsley. Add lemon juice and a nice pinch of salt and pepper. Pour prepared cream sauce over the seafood. Top evenly with mashed potatoes. Place in the oven for 25 minutes. When finished, sides should be bubbly and potato peaks should be browning. Top with fresh chopped chives if desired. Allow to sit and set 10-20 minutes before serving with crusty bread.

Get Your Body & Mind Healthy & Fit This January :)

Happy Thursday , we all need good intentions to set our mind and body on a healthy path , but most of the time we almost never know where to start . So this January I have decided without setting it as my New Year resolution I shall stick to this basic plan for every alternate week throughout the year . I am very keen to stick to the routine because it then becomes a habit and a healthy habit is a plus !

Monday : End your day with 15 minutes of meditation before you go to bed . Turn your lights very low , light a candle and some incense and close your eyes . Don't focus on any of the bad things of the day or the boring everyday you face . No try and think about one thing that maybe made you smile , or if somebody did something good for you . If that didn't happen , it can .. because life can be hum drum !! Focus then on a waterfall , the sound of birds a forest setting and you will start to feel peaceful !

Tuesday : Stop binge eating . Try not to snack on any junk food between meals . If you are hungry eat a piece of fruit . Eat well at your main meal , and have 2 lighter meals in the day . Try sticking with it , for at least 3/4 days in the week , and you will feel healthier .

Wednesday : Try to fit in some keep fit exercise . Yeah I know some of my friends have never done any exercise , and would feel awkward starting something now . Will their kids laugh at them ? I remember my Mum never did any exercise , and it's weird to think of her doing some keep fit stuff . But it's never too late for anyone to begin , especially with so much of processed junk food being sold cheaply , and somehow it, never satisfy's your hunger , like a good home cooked meal , does . My kids are so used to seeing me doing my keep fit routine , they don't bat an eyelid . My youngest did ask me Mum  "why do you , do so much exercise , you are not fat ?" I just said well Mama likes to stay fit , and nobody should wait to turn fat to start getting active !

Thursday : Give yourself , a nice facial .. scrub your face use a face mask . Soak in the bath , and then lavish tons of body cream all over your body .Don't miss a spot and remember pamper your feet the most . We use it to walk our whole lifetime , it supports our whole body weight . It needs to look good and feel soft . Should not be rough and unloved .

Friday : One day in the week , we should give up meat . Is that really hard ? It gives the body a good cleanse and has us revved up to eat meat the next day ! There are really good alternatives , Fish is absolutely awesome , eggs can make a great wholesome dish . Vegetables are so healthy and there are some great vegetarian recipes available to make your meal so , so tasty . I shall in the coming weeks put up some great vegetarian dishes for you all to make and try .

Healthy Food Choice ... The Avocado !

Happy Tuesday , In spite of all the woes I still feel blessed . If you do the right thing at all times and feel you always make the best choices , God still finds a reason  to bless you ! 

Today I was reading a little news article , and I was a little surprised ... Yes because it said a woman who was with her partner for 22 years and he passed away without leaving a will , now her two children will inherit everything leaving her nothing . She was upset at the fact ! I keep wondering Why ?? I was happy to read her children inherit why on earth is she not ? Is it because , they will not give her any ? Well they rightfully don't need to give her ! She choose work over them while they were growing up they were at babysitters , creches etc . So well she can go on making choices without her kids in mind and let them make choices without her in mind ! What goes around , comes around ! Good reason to give your kids your all , because there will be no doubt in mind you will always be their priority , when it matters most !

But now for a healthy food choice to make , everyday !

January , it's a new year and everyone is going to get a year older . Is it just me or does everybody getting older feel their memory is not as good as it used to be ! They all say stress is also a likely cause but there are people who have excellent memories even as old people , so there must be things you could do to build up that brain power . 

So I did some research and here are ten excellent ways to boost your memory . Have fun trying but never get defeated some memories no matter how old we will take to our graves .  Happy New Year ... Give it a shot !

We all need to boost our memories ,  taking on all the responsibilities , having children , a business to run , the household , bills ... Well we can do with , a few extra tips to boost our memory power .
I know if I don't keep a diary of birthdays  lately , lol I'm forgetting them . Yes had me worried , when I used to have the memory of an elephant :)

1. Starting in the morning , brush your teeth with your non-dominant hand . This stimulates interaction between two sides of the brain , meaning new neural pathways develop , boosting your grey matter .

2. A handful of blueberries in the morning with your porridge ,cereal or natural yogurt for breakfast . They're rich in flavonoids , which increase blood flow to the brain and can improve concentration by 20% .

3. Have a Latte mid-morning . Milk can boost memory , concentration and learning abilities . In fact adults who consume dairy products five to six times per week , did far better than those who rarely ate or drank them .

4. Don't eat a large lunch - it will only make you sluggish in the afternoon . Food rich in B vitamins , such as Chicken , potatoes ,and bananas can help improve your memory and keep your brain healthy and alert .

5. Chewing Gum , sharpens the wits . Tests found people who chewed during memory tests scored higher than those who didn't . The chewing increases heart rate , boosting the oxygen supply to the brain .

10. Get enough sleep . Lack of sleep boosts the formation of amyloid beta , the toxic protein that clogs up the brain , according to a recent study .
