Easy Chicken Casserole Dish With Okra !

Happy Wednesday !

Today the weather turned grey and dull and very rainy throughout the day , summer is almost gone and it felt a bit like autumn . So it's really nice to cook a hearty meal for the family to enjoy . Since the kids really love chicken , I have no choice but to think up 110 ways to cook chicken . one of my most favourite ways is to make a chicken casserole . There are so many great ways to combine the chicken in a casserole without it always tasting the same .
I love combining a great vegetable into it as well so the kids are getting greens in their diet as well . One of my favourite casseroles is a Louisiana casserole with lady fingers or Okra , it's super tasty and healthy , anyone would love it . I've been using this recipe which is easy to make and quickly ready today I would love to share it with you guys .

Ingredients

  • 300 gms shrimps
  • 2  boneless chicken breast 
  • 1 medium onion
  • italian-sausage or Chorizo 
  • 4 tbsp. salad oil
  • 200 gms whole okra
  • 3 tbsp. all-purpose flour
  • 1 tsp. salt
  • 1 bottle clam juice
  • 1 can stewed tomatoes
  • Puff pastry 
  • ½ c. milk
  • 1 large egg
  1. Shell and devein shrimp; if you like, leave tail part of shell on shrimp. Rinse shrimp with running cold water. Cut chicken-breast halves into 1/2-inch strips. Chop onion. Remove casing from sausages.
  2. In a skillet pan over medium heat, in 1 tablespoon hot salad oil, cook sausage meat until browned, stirring frequently. With slotted spoon, remove sausage meat to medium bowl.
  3. In the same skillet with drippings and 1 more tablespoon hot salad oil, cook onion 10 minutes; add chicken and cook 2 to 3 minutes longer or until onion is tender and chicken is lightly browned; remove to deep 3-quart casserole. Add shrimp and okra to casserole.
  4. Preheat oven to 400 degrees F. In the same skillet over low heat, into 2 more tablespoons hot salad oil, stir flour and 1/2 teaspoon salt; cook 1 minute. Gradually stir in clam juice or chicken broth until blended; stir in stewed tomatoes and cook, stirring frequently, until mixture boils and thickens slightly. Pour into casserole.
  5. Into sausage meat, stir corn-muffin mix, milk, egg, and 1/2 teaspoon salt just until mixed. Cover with the puff pastry dough over seafood mixture around edge of casserole leaving center open. Bake casserole, uncovered, 20 minutes or until the puff pastry is nicely browned. Cover casserole loosely with foil to prevent overbrowning; bake 20 to 25 minutes longer until mixture is hot and bubbly and shrimp turn opaque throughout. Healthy With Eight Of The Best Veggies !

Hope all you guys took time out to watch the Eclipse in the USA , I watched it live streamed and it was absolutely breath-taking . Did Trump actually look up without glasses , now who said he's not a man with balls , just love him !

Read somewhere that a lot of girls are having a weird menstrual cycle this month , and it's because of the eclipse , I can't say if it was actually weird for me , but I did have extreme cramping this month !!!
The weather is perfect and everyone is looking forward to the Bank holiday weekend . Hope you guys have some great plans to keep yourself and the kids busy . Today's blog is about some of the best veggies you can find that are healthy and good for you . The eight best vegetables around , we could eat this season and in autumn which is not so far away , to get us healthy so our body is fit and able to cope with the colder coming months . Even though a lot of people are not fans of veggies , you could cook up some hearty meals to satisfy yourself and keep you warm . These are my favourites and I cook them up in almost everything !

1) Spinach : 2 cal , It's high in fiber , protein ,calcium ,iron , magnesium , potassium and vitamins A ,C , E , K and B6 as well as high in sodium . The best ways to eat it is raw , in salads stir-fried or cooked in a curry .

2) Red Bell Pepper : 30 cal , high in fiber , potassium and vitamins A ,C ,K , D and B6 . High in natural sugars it is best eaten raw , or in salads , roasted or stir-fried .

3) Red Onions : 44 cal , high in fiber , potassium and vitamins C and B6 . They are high in natural sugars . Eat them in salads , raw , sauteed or stir-fried . Aldi  does a great offer almost every week 59 p for a kilo :) Onions are best often eaten raw , brush your teeth after lol ..

4) Tomatoes : 22 cal ,high in magnesium , fiber , potassium and vitamins A , C and K . High in sugars eat them raw in salads , sandwiches or use them in tomato based pasta sauces . Super delicious !

5 ) Eggplant or Aubergines or Brinjals , wherever in the world you are , those are the names used and I particularly  love this veg . 110 cal ,high in magnesium , potassium and vitamins C , K and B6 . Eat them roasted ,  grilled or stir-fried !

6) Cucumbers : 24 cal , this veg is high in magnesium , potassium and vitamins A , C and K . High in sugars , eat it raw or in salads .

7) Cauliflower : 3 cal , high in protein , magnesium , fiber , potassium and vitamins C , K an B6 . High in sugars eat it steamed ,roasted or in salads .

8) Mushrooms : 2 cal , high in fiber ,protein , iron , potassium and vitamins d and B6 .eat them stir-fried ,sauteed ,or roasted . Add them to pastas , noddles, salads and casseroles !

Kick The Tiredness !


Happy Tuesday !

Wouldn't we just love to wake up bursting with energy ? But if you are struggling to remember when was the last time that happened , well join the club . Seven out of ten people complain of feeling tired all the time . The constant feeling of fatigue is pretty much the norm .
There are a good number of reasons why this is happening , but I shall list five of the big ones ! Make a change and you could start feeling more energized and ready to take on the world .

1. You Are Not Getting Enough Sleep :  Sleep is simply not our priority anymore . Being able to survive on on four five hours sleep is often celebrated and thought to be enough , but it means our body does not have enough time to do important repairs and restoration . It is also important to ensure the sleep you get is good quality . That means commit to going to bed early two to three times a week . Don't have caffeine after 5 pm .remember it's important to switch off your phone & computer  an hour before bed to give your brain at least an hour to unwind .

2. You are Stressed or Anxious : Stress can be very draining ! Your tiredness can be due to the fact that you are under a lot of stress be it from work issues or personal life  . There is evidence to suggest that stress can often cause physical problems and even shorten your life span . Yoga , meditation , and breathing exercises can be practiced to keep stress and anxiety level low . Breathing exercises can be practiced for example on the commute to work  , if you just build it into your day , it can make a whole lot of difference to how you feel .

3. Your Body is Lacking Iron : An Iron deficiency is a common reason for women to feel lethargic . If you are feeling tired constantly ask your doctor to check your iron levels . If you fall short there are plenty of ways to turn the situation around . There are plenty of iron supplements around , and you could also add leafy green vegetables to your diet like spinach . Liver is also good to have , rich in iron .

4. You are drinking Alcohol to close to Your bed time : While a glass or two of wine can act as a good sedative , the quality of your sleep is seriously disrupted . Alcohol can affect the deeper part of your sleep REM , which means you are more likely to wake up in the middle of the night and be restless , dus not having a good nights rest , which does not have you feeling refreshed in the morning . The good news is you can still have that tipple , it's just when it gets to excess that the body suffers . Moderation is the best policy !

5. You are not Eating Enough Fruit and Vegetables : Many of us rely on processed food and refined carbohydrates , so we miss out on vital nutrients like B Vitamins , which give us energy . foods with alot of additives and preservatives are harder for the body to process , using up energy that could be directed elsewhere . You need to have five pieces of fruit and vegetables a day at the minimum to have a healthy balanced diet and feel energized and rested .

Boost Your Memory ,Ten Tips !

We all need to boost our memories , especially if we are a certain age , take on all the responsibilities , have children , a blog to run, work stuff the household , bills ... Well we can do with , a few extra tips to boost our memory power .
I know if I don't keep a diary of birthdays  lately , lol I'm forgetting every one of them . Yes had me worried for a while, when I have the memory of an elephant :))
So I've done some research and come up with , some really valuable tips  to improve your memory .

1. Starting in the morning , brush your teeth with your non-dominant hand . This stimulates interaction between two sides of the brain , meaning new neural pathways develop , boosting your grey matter .

2. A handful of blueberries in the morning with your porridge ,cereal or natural yogurt for breakfast . They're rich in flavonoids , which increase blood flow to the brain and can improve concentration by 20% .

3. Have a Latte mid-morning . Milk can boost memory , concentration and learning abilities . In fact adults who consume dairy products five to six times per week , did far better than those who rarely ate or drank them .

4. Don't eat a large lunch - it will only make you sluggish in the afternoon . Food rich in B vitamins , such as Chicken , potatoes ,and bananas can help improve your memory and keep your brain healthy and alert .

5. Chewing Gum , sharpens the wits . Tests found people who chewed during memory tests scored higher than those who didn't . The chewing increases heart rate , boosting the oxygen supply to the brain .

6. Have Green tea instead of black . Chinese researchers suggest drinking green tea regularly could improve your memory delay the onset of Alzheimer's and fight heart disease - thanks to the key antioxidant called EGCG ( epigallocatechin-3-gallate ) .

7.Empty the dishwasher while listening to the radio . As we get older , our brain becomes less efficient at multitasking , yet combining activities like cooking while listening to the radio , forces it to do two things at once .

8. Indulge in a few squares of dark chocolate . Studies have linked compounds in chocolate , called flavanols , with improved memory .

9.Arrange a night out with friends . People who have plenty of social contact with others are less likely to develop serious memory problems . Research has found that socializing stimulates the mind , keeping memory and mental abilities sharp .

10. Get enough sleep . Lack of sleep boosts the formation of amyloid beta , the toxic protein that clogs up the brain , according to a recent study .

Do Good Always and Inspire People :)

Happy Tuesday!

It's a beautiful day and I feel very blessed everyday.. it's just a shame that we live in a world full of jealous envious people. My goal in life is peace & love and helping everyone do better in life. Unfortunately this is met with jealousy. In my last blog I spoke about hate, and how it was wrong of Obama to tweet that when there is so much trouble in the USA. Hate is wrong even if Nelson Mandela was promoting it. I had said this even on my Twitter account, hate is wrong and in this world at this moment we need no hate only love. Two women started giving me grief on it pulled a third party in, said I loved him and others, not relevant to anything and called me names. So I blocked them. Today afternoon she reported me to twitter and I have been restricted for 12 hours because in one tweet I called her a stupid bi**h. I had to delete that tweet. I have done that, and will be back on Twitter in 12 hours , a small inconvenience!

I will probably lock my twitter so if anyone wants to follow me for free horse racing tips or to get my motivational advice feel free. I love to inspire people and do good for this world. These two women are so nasty and still abuse me on their twitter feeds call me psycho, a faker, so petty like schoolgirls and jealous. I am not bothered. I always think about people who are popular incredibly there will be a lot of haters. See Donald Trump even famous people hate on him and say such nasty terrible things about him. It's disgusting to have hate and speak bad about others. No blessings from God is going to come to these people.

Please lead good lives. Look to inspire and uplift people everyday. Love everybody and treat everyone kindly.  Having a positive outlook on life leads to inspiration. Happiness is found when you stop comparing yourself to other people.And most of all don't worry about those who talk behind your back , they're behind you for a reason.

Love is Better Than Hate Any Day :)

Happy Sunday!

A good day always begins with a smile and spreading happiness. Make that your motto in life to do good for others and be kind. Hate has no place in our society in the world we live in today; nobody should ever use the word hate, and definitely not in the context of beginning a tweet. Yesterday Obama quoted a tweet of Mandala about how you must first learn to hate before you can learn to love, lol. This is the most ridiculous thing in these modern times. When old man Mandala first said this quote, the world was not in the state it is today. This quote should never be used. No it is not okay to hate and nobody should ever learn to hate! It should only be about Peace & Love. A child knows no hate and should never be taught hate. That's where the world is going wrong. And even if Nelson Mandela made this quote up, doesn't mean it's okay to use it today. Obama is an idiot, and a lot of people blindly follow lacking any common sense. Please love more in your life and think more about peace than the spreading of hate! Had to deal with two idiotic people today but tried to teach them love & peace but of course people don't cope well when corrected so the best place for them was deleted and blocked because I have no time for idiots in my life, it's all about love & peace & happiness.

I love the quote of William Shakespeare. "The earth has music for those who listen." Beautiful isn't it? How many people take the time to listen to the music of the earth. Stand back, meditate, and find that music. It's connected to peace in your heart. Find your inner peace. It comes when you are enjoying doing what you love and spreading love and peace.

Stylish to Work!

Happy Saturday!

Today's fashion choice is a work outfit if you happen to call the office environment a happening scene, then you want to wear some really nice outfits to look smart and trendy. Most office workers stick with boring suits mostly dark colors and blend right into the office furniture. Always choose a nice tailored pant or skirt with detail and skip the boring shirt for a smart fitted top. Some nice statement jewelry and smart shoes. Notice I've gone for some flat comfortable pumps but I know there is a lot of discrimination where woman are told that part of the office attire is a compulsory high healed shoe. Yes, its sometimes nice to wear high heals but don't let it be dictated to you. If you are over 5'4'', there is no possible reason that you must be forced to wear heels, but as a woman feel free to wear what you love.

Tips For Travelling & My Experience!

I have been travelling and just returned from a lovely vacation. Nothing beats spending time with the children away from the xbox ,but of course phones are something we all carry with us so it's not social media goodbye for that time. But somehow managed to take in lots of sightseeing, the beach although it was not burning hot and I can't say I sunbathed in my bikini. Shopping abroad is a joy and even though I have tons of clothes I stll managed to buy a couple of big bags of stuff. It's also highly unlikely I will be throwing out any of my clothes from my wardrobe to make space. Although I always remember a show of Oprah Winfrey where she said if you don't wear something for six months get rid of it. Of course I never do that. Most often I don't need my winter clothes for six months but I def. need it when the cold months roll along!

Why is it that women love to buy lingerie? I buy so much and it's not like I have anyone to appreciate it , lol. But you are never completely dressed if you don't have something sweet on underneath. We have got to dress up and take care of ourselves if we are to have good self esteem, confidence, and look smart. It's a basic tool to surviving. Don't dress like a slob unless you are very,very rich. I do know if you are travelling on a plane and they are looking to upgrade people, chances are higher you could get an upgrade if you are dressed smartly.

I always try to dress casual smart when travelling some dark colored leggings, a tank top, or a nice blouse and always a smart blazer instead of scruffy denim jackets Keep those for days when your sight seeing or walking at a market place. A nice scarf is a must and don't forget the sunglasses. I often put them on if I want to rest and drown out everybody else. I can't say I ever get sleep on a plane no matter how long the flight. I just don't feel comfortable. As the air on a plane is very drying on the skin, one of the first things you should do is clean your face and remove your makeup. Then slather on some moisturizer. Don't forget to regularly use hand sanitizer and then some hand lotion. Keep hydrated on a flight by drinking water and I would recommend not more than two alcoholic drinks. In any case the in flight drinks are not cheap and pointless having more than two.. It relaxes me and time flies by. Don't forget the iPod so music can entertain you, it does me. I always try and buy a few magazines to catch up with gossip or fashion news on the flight. A book is not the best because I have to put it down too many times as the children also like my attention.

If like me sometimes you have to travel alone to catch up with the rest later, it's nice to make friends on the plane. Although don't talk too much in case the person does not want to be disturbed. I met a very nice young man travelling and he even serenaded me with some violin playing, it was very sweet. The funniest part was when he took out his wallet to show me how small it was and the notes in Europe are so large for it. In the USA, smaller wallets are normal. But maybe he was trying to show me how much cash he had, lol. I don't know! No, we did not exchange numbers. He was 24 and me I said I had children!

On the plane I try to keep my food light. I know a lot of people turn up their nose at airline food and travel with some fruit, but I like to nibble at whatever they serve, but I never eat it all up. Travelling with children can be bothersome if they are very young so it's always advisable to have another adult with you. I remember I traveled long distance when my daughter was a baby at five months I took her alone on a KLM flight. It was the absolute worst flight of my life with a small baby I never ever traveled with them again. I remember I had to go to the toilet and I asked the air hostess to carry my baby until I got back. She refused. Luckily a whole host of passengers jumped to take the baby for me, they were very helpful. The air hostesses only sat around reapplying their red lipstick. They made a problem warming up the baby's milk and when I insisted they do it , they took the milk and didn't return with it. When I went looking for them the milk was bloody hot and my baby was crying with hunger. I honestly think the best thing is stay away from that airline. KLM truly the worst in the world. On another journey when I took my baby a few months later, I went with SAS. The best experience of my life, definitely the best airline in the world, in my opinion. They were brilliant with me and my baby. Although the air hostess are a bit older than the KLM bimbos, they are absolute treasures. I always try to make sure when i fly , I choose SAS. British Airways is also a very good airline I have always had positive experiences withthem.

Beautiful blouses to add color and glamour to your wardrobe. Almost everyday, every woman's first thought is what am I going to wear? My advice is get at least a couple of new blouses every season and switch them around. Wear them over jeans, skirts, jeggings, leggings, maxi skirts, or denim shorts. So you give the appearance of having a lot of outfits but in truth you are being fashion savvy and getting the best out of a few items.
Some of my favorite blouses would be in bright colors or I would go for darker tones depending on how I feel. Bright colors show your fun, happy disposition but if you're feeling grumpy by all means get the black and browns out. One thing to be proud about is not deny yourself your feelings. It is quite okay to be happy and it's equally okay to be sad and cry. Nobody is happy at all times. We are human beings and we have emotions. If you don't allow your feelings to show you are going to be emotionally unhappy and it's a big weighty burden to carry around. Very often, if I don't like something, I don't hesitate to express my feelings, so I feel better and I can continue with my day without letting it fester.
