Delicious Roast Chicken!

Happy Monday!

It was such a beautiful Spring day with lots of sunshine and very little wind. When my heart feels happy there is only one kind of hearty food I love to eat - a roast chicken! It's delicious and juicy and my children love it! So I have decided to share my recipe with you all!

Ingredients
1 Whole chicken
Salt & Pepper to taste
1/2 a cup of frying butter
1 1/2 table spoon of onion and garlic powder
1 onion and 1/2 lemon

Pre heat the oven to 175 degrees C. Place the chicken in a roasting dish, slash the skin with a knife. Season generously with salt and pepper, and the onion and garlic powder in the cavity as well. Then add three tablespoons of butter in the cavity. The rest of the butter, dallop over the bird.

Cut the onion and lemon and place on the inside of the chicken.

Bake uncovered in the oven for an hour and 10 minutes depending on the size of the chicken.

Remove it from the oven and baste with the melted butter & juices (drippings). Cover with aluminium foil, and allow it to rest for 30 minutes before serving. Bon Appetit!
