An Easy Breakfast Recipe With Egg!

Mid week and there was racing on telly. What's happening, what was the excuse to pleasure us all and perhaps even give people the excuse to call in sick! All that excitement but it was definitely a bookies day. Almost all the favorites put on a poor show and were beat. My predictions all managed a measly 2nd and any doubles that I put in hit one and lost the other! Soupy Soups put on a good show and won. Frankle's colt, Seventh Heaven, didn't show off his pedigree, he only managed a third. Not William Buick's day, he only managed 2nd placings in both races he was expected to win. Frankie Detorri shone as usual on televised racing days. He loves his flying dismounts to charm us. Next time I'm sticking with Frankie on TV days, ''big smile'' he brings in the dough.
The news that an election has been called must have reached everyone by now. Best thing Theresa May could have done! She doesn't stand a chance of winning. The Tories are running scared, she says no television debates. What is she scared off? Can't compete with the likes of Jeremy Corbyn, Nicola Sturgeon. May is too old and can't remember much , standing under TV lights. She is going to be lost , forget everything, and look really bad. We need Labour. We need our NHS funded, schools to be given priority, our social services which have faced austerity from the Tories. The poor and disabled, more than 70% of the population is badly off & stuck in poverty, which is a big shame for a supposedly rich country. My goal in giving horse racing tips, is for the people of the country to have a chance to win make some money ,and do better. Give themselves & their family treats and days out. If I can do one good thing for somebody less fortunate, I can truly say I'm making the world better and richer.

For this blog, I would like to share with you an easy egg recipe. A hearty breakfast will fill you up and get you ready for the day ahead.

Ingredients:
100g bag spinach
400g can chopped tomatoes
1 tsp chilli flakes
4 eggs

Instructions:
1. Heat oven to 200C/180C fan/gas 6. Put the spinach into a colander, then pour over a kettle of boiling water to wilt the leaves. Squeeze out excess water and divide between 4 small ovenproof dishes.
2. Mix the tomatoes with the chilli flakes and some seasoning, then add to the dishes with the spinach. Make a small well in the centre of each and crack in an egg. Bake for 12-15 mins or more depending on how you like your eggs. Serve with crusty bread, if you like.
