Delicious Pork Filet With Cream & WaterCress

Not only Santa bringing you all your heart's desire's but peace and hopefulness for the coming year as well !

Okay so we have eaten and drunk more than was necessary these past few days ,  but if only we could survive now without eating it would be a miracle not only for our waistlines but the thought that I don't need to cook now for a week at least ! That is not and never going to be the case .  We still need to eat everyday :(

So You head off to the supermarket and the thought is what is it going to be today ? I make a habit of changing it around pork , chicken ,  fish , beef and then again the same but I break it up every ten days with egg on the menu and a vegetarian day .  It's always different and fun . Nobody complains in my house :)
When it's pork though I sometimes get some pork loin filets and think , what's going to be quick easy and delicious ? I have a super easy recipe which you all are going to love , with boring pork it 's fun and so tasty . So I'm sharing  !

Ingrediants

400 gms Pork loin filets  .. cut it up into inch size pieces about 1/2 an inch thick .
4 spring onions chopped into pieces
25 gms butter
2 tsps of oil
2 garlic cloves crushed
Salt & Pepper
175 ml double cream
50 gms water cress
1/2 tsp of dijon mustard

Get your frying pan on the heat add the butter and oil when it melts add the garlic and spring onions allow it to cook for 2 mins . Now add the pork pieces and season with salt & pepper cook it for 2 mins on each side then stir in the cream and bring it to a boil for about 3 to 4 mins .Add the water cress and Dijon mustard and allow it to bubble for 2 mins .add 2 to 3 tbs of water to it if the sauce is too thick . It's ready to serve .
Eat it with mashed potatoes and green vegetables peas or french beans is perfect !
