Amazing Chocolate Brownies, You Can't Say No Too !

Happy Wednesday,

Intensely proud of Great Britain's achievement at the Olympic games. They are currently in 2nd place on the leader board for medals at the Games. This is the best G.B. have ever performed at an away games! Today the British women's hockey team has made the finals on Friday. So a medal is definitely secured, my bet is the gold. They will have no problem trashing the likes of The Netherlands at the finals. A very poor performance by the Dutch team at the Olympics! Zonderland who I thought might have a chance went and fell like a sack of potatoes. Instead of training in preparation for the games, my guess he was busy studying medicine to secure his future and life after the Olympics. After all, it is not a country who looks after its citizens. On , to other stuff ... Well, if you are thinking of having a future Olympic champion look no further than making sure your child is born on the 23rd of March! All the great Olympic champions who have pulled in a superb medal haul for the UK just happened to share the same birthday of the 23rd of March. Mo Farrah, Chris Hoy, Steve Redgrave, Jason Kenny, as well as the first person to break the 4 minute record in the mile Roger Bannister. An amazing number of people! So if you are enjoying the Olympics as much as I am, you would need more than coffee to keep you up all night enjoying all the events. You would need healthy eating to give you fitness, and good endurance to overcome tiredness and lethargy the following day. Eat well and not only for today ,make it your living plan. The secret to a good long life is drinking coffee, red wine, and dark chocolate. Over indulgence in these are also bad! So go easy , keep fit and healthy with regular long walks or jogs.

Here's one of my favorite recipes for chocolate brownies. They are absolutely delicious. Enjoy.

Ingredients:
Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter (2 sticks)
1 1/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Instructions:
Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.

Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.
