Delicious Tomato & Lentil Salad!

I have been enjoying seeing all the photos of the Duke & Duchess of Cambridge on their tour of Canada. Kate has been dressing very smartly, some might say she looks overdressed simply because William has been dressing down. He is very casual with his clothes. I have not seen one picture of him with a tie! Not that I don't like his style, I do, but at the side of Kate he is looking like the poorer relative, lol. I do love his tight trousers no matter what people say and the mis-matched blazer & trousers is definitely his style. What I love about Kate is her love of re-using her clothes and shoes. This tour has seen her using her L.K. Bennet shoes a lot. I also love it that she doesn't use these very expensive designer shoes with red soles that set their price range sky high. I see many European royals flashing these designers ,when most of their citizens are suffering with less money in their wallets due to their governments policies. The Duchess of Cambridge does England proud! But she could do with adding a few more kilos on her bones. Her waist & hips look fragile, and they say the camera adds pounds, so in person she must be even slimmer. I can't blame her though, there is so much scrutiny on public figures that she feels to look glamorous ,means being super slim. Being healthy is more important and that means eating a lot of fruits and vegetables to remain healthy and slim. Look at athletes and see they are fit & super healthy with abs to die for. Toned arms, legs, and great muscles. We all should combine good eating with exercise to keep our bodies toned and healthy for good circulation, so healthy skin and all over good health.
Today I am putting up a recipe of a delicious lentil and tomato salad. Enjoy!

Ingredients:
250g dried Puy or green lentil, rinsed
juice ½ lime and juice ½ lemon
1 tbsp white wine or cider vinegar
1 red onion, thinly sliced into rings
2 tbsp extra-virgin olive oil
1 tsp ground cumin
1 small garlic clove, crushed
2 tbsp mango chutney
handful coriander, roughly chopped
250g cherry vine tomato, halved
85g baby spinach, washed and thoroughly dried

Instructions:
1. Boil the lentils following pack instructions, drain, rinse well, then drain thoroughly.
2. Meanwhile, mix the citrus juices, vinegar and a pinch of salt in a salad bowl, then toss in the onion rings – after a few mins they will soften and turn pink. Whisk together the oil, cumin, garlic and chutney, then toss into the onions with the cooled lentils, coriander, tomatoes, spinach and plenty of seasoning.
