Fruit and Muesli Bowl: A Healthy Breakfast!

Happy Thursday!

The news all over the press is Brad and Angelina. Nobody saw that coming. In the words of Angelina's father, Brad must have done something really serious to provoke such a reaction from Angelina. The praises from Angelina for Brad as a father were always overflowing. He always looked supportive and caring towards the children. Angelina has been hurt to react in such a way towards Brad. It's simple to see Brad's roving eye is well known, and falling for costars . The French actress Marion announcing her pregnancy today in the eye of the storm , is not to be overlooked. She can protest all see wants, the baby is her partner's (she won't want to stoke the fires even more!) but time will tell! I for one don't think Angelina is completely stupid, she did manage to steal Brad from Jen and a man once stolen can be stolen again! She of course won't let him have the kids if he's been busy sowing new seeds. Like the kids he already had were unimportant. If the papparazzi photos are true and the FBI & police are investigating Brad, surely there are more important issues they need to get on with! Angelina aggrieved means she will go to any lengths, she made a pretty good Maleficent!

So while you catch up with all the daily news, staying fit and healthy is always top priority. Here is one of my favorite recipes! Enjoy.

fruit and muesli bowl

Ingredients:
 50g butter, plus extra for greasing
125ml clear honey
300g jumbo rolled oats
85g mixed nuts (e.g. macadamia and flaked almonds)
50g desiccated or flaked coconut
1 tsp vanilla extract
85g mixed dried fruits (e.g. cranberries and raisins)
1 tbsp finely chopped crystallised ginger (optional)

To serve
500g pot natural yogurt
1 mango
100g blueberry

Instructions:
1.Place the butter, honey and a pinch of salt in a small saucepan, then melt over a medium heat. Tip the rolled oats, mixed nuts, coconut and vanilla into a large bowl, then pour over the melted butter mixture and stir until everything is well coated.
2. Heat oven to 180C/fan 160C/gas 4. Lightly grease a large baking tray with butter. Tip the muesli mixture onto the tray and spread out until evenly covered. Bake in the oven for 10 mins, then use a spoon to carefully toss the mixture around. Take special care to get into the corners as these may be starting to brown. Cook for 5-10 mins more until the mixture turns a light golden brown. Now mix through the dried fruits and ginger, if using. Leave to cool.
3. To serve, spoon the yogurt into 4 serving bowls. Peel the mango and, cutting around the stone, thinly slice. Put into bowls along with the blueberries, then scatter over the crunchy muesli.
