Eggs For Breakfast: Delicious & Healthy Recipe!

Happy Sunday!

Today was a cool fresh day. The heatwave long forgotten with a change of weather. It always means coughs, colds, and runny noses. So what better way to wake up and make a nice hearty breakfast. The best way to begin the day is eating, so you are not starving by 11/12/1/2 and you keep snacking at every hour with stuff that's not good for you loaded with sugar. Like biscuits and a whole pack at that. If you eat a good breakfast it will keep you going 'till lunch.
A nice solid breakfast consists of good protein to help build up energy for the day. Eggs are very nutritious and healthy so this egg recipe is one of my favorites for a good breakfast.
Don't forget, if you are going for some oats cereal, feel free to have full fat milk. It's healthy for you and it's a complete myth that it would make you get fat! It's the sugar that we put in our body that gets converted to fat. Don't add too much sugar to your porridge, tea, coffee etc. Stop with the fizzy drinks and indulge in plenty of water.

Vegetable, ham omelette

Ingredients:
2 whole egg and 3 egg whites
1 tsp olive oil
1 red pepper, de-seeded and finely chopped
2 spring onion, white and green parts kept separate and finely chopped
few slices wafer-thin extra-lean ham, shredded
25g reduced-fat mature cheddar
wholemeal toast, to serve (optional)
1-2 chopped fresh tomatoes, to serve (optional)

Instructions:
1.Mix the eggs and egg whites with some seasoning and set aside. Heat the oil in a medium non-stick frying pan and cook the pepper for 3-4 mins. Throw in the white parts of the spring onions and cook for 1 min more. Pour in the eggs and cook over a medium heat until almost completely set.
2.Sprinkle on the ham and cheese and continue cooking until just set in the centre, or flash it under a hot grill if you like it more well done. Serve straight from the pan with the green part of the spring onion sprinkled on top, the chopped tomato and some wholemeal toast.
